Bodegas Platé production process:
The bananas used in production are Plátano de Canarias (PGI), which are purchased from the Canary Islands. After the bananas arrive in the warehouse, a second selection is made, removing the bananas that have passed the maturity and those that do not have the optimal degree of ripeness, following which the bananas are cleaned one by one manually.
Once cleaned, they are placed in a mixer that finely grinds all the pulp and yeast is added at the end (the same yeasts used in winemaking).
The next process is the fermentation process that takes place in stainless steel tanks. (In the same tanks where the wine is fermented)
Once the desired density is reached, the fermentation is stopped, the product is filtered and clarified (the filter is used for vinification as well as the clarifier).
Once clarified, the wine is bottled in bottles with ecological properties, due to its low weight, the carbon footprint is much lower from production, transport and recycling.
The main difference between a grape wine and a banana wine is the raw material used, because the physical, biological and chemical processes that take place during the process are the same.
The whole process of obtaining the finished product, from the moment the raw material arrives in the warehouse until it is bottled, is between three and four months.
